speaking of jiffy corn muffin mix, inspired by this posting i obtained several boxes of the vegetarian version at a supermarketalthough the directions for preparation are lacto-ovo, the package also offers vegan alternatives - Egg Substitutes:1/2 banana, mashed1 tsp. soy flouri tsp. flax seed, ground1/4 cup white beans, pureedMilk SubstitutesSoy milk or Almond milkwhen the bananas are ripe i'll bake a box
